
The owner of this recipe is unknown, which is probably good since I made extensive modifications to the recipe.
The recipe calls for 1/4 cup of eight different kinds of beans, lentils, and pearl barley. I was sure they would have a nice selection of bulk beans and grains at PCC because they have an entire aisle of bulk items. Guess what? They had a selection of sugars, flours, cereals, nuts, a dozen varieties of trail mix, but not a single bean. So...we headed to the non-bulk section. Not a single bag of beans. Sorry folks, my soup is based on canned items; specifically, a can each of great northern red, pinto, black eyed peas, aduki, lentils, and barley.
I started out by browning a chopped onion in oil in a big pot. Then I started adding all the leftovers in my refrigerator-chard, cooked egg noodles, tomato sauce, tomato soup, chopped flat leaf parsley. Then the six cans of beans/lentils/barley.
It was thick, almost like a chili, so I added a box -about six cups-of chicken broth. I seasoned with chili powder and S&P.
My first taste has me convinced it will be outstanding! I'm letting it simmer until dinner in about an hour.
P.S. In all fairness to PCC, they do have bulk beans. We both just overlooked them. Bulk would have cost less, but canned were sure convenient.
