Breakfast Casserole




We're still snowed in here. We got 6-8 inches Thursday night. The sun is out, so it's beautiful, but it's very cold and icy. Andy humored me last night and took me up to Red Apple so I could get the bread, cheese, oatmeal, and sugar I needed to make today's recipes. And what better time to have a Breakfast Casserole. Thanks, Judy Cross! This one was easy:





  1. Tear 4 slices of bread and put them in a large greased baking dish.


  2. Brown and drain the sausage (I used 6 links of mild italian), then cut then into bite-size pieces over the bread.


  3. Add a layer of 1 1/2 cups grated cheddar.


  4. Beat 6 eggs, 2 c milk (I used nonfat), S&P and mustard. The recipe was for 1 t dry mustard; I used about 2 t whole grain I had.


  5. Put this mixture in the pan.


  6. Bake 40 minutes at 350.


It was very good, but a bit soggy. Probably should have cooked longer. It makes a lot, so I'll bet it will firm up as we use the leftovers.
