Ham & Pickle Roll-Ups

When I first saw this recipe, I laughed. It's hard not to make fun of a "recipe" for spreading cream cheese on a slice of ham, rolling it around a pickle, and securing it with a toothpick. The "recipe" even calls for round toothpicks as an ingredient!

I remember these tasty treats from my childhood. Mom made them as a 70's party treat. But I underestimated my cousin Deo's contribution to the CFC:

  1. The damn cream cheese does not really spread on the ham slice. I ended up placing globs of cream cheese at one end, sticking the pickle in the sticky cheese mixture, and rolling.

  2. I bought cornichons (the label said "piquant & tasty") instead of dill or sweet pickles thinking I would class up the recipe. Great idea, but now I wish I had used Danish ham slices as called for rather than a pouch of sliced lunchmeat ham.

  3. I cut the ham slices to fit the little cornichon before spreading, rolling, and securing.

End Result - DELICIOUS!
