Bottoms-Up Apple Cake


This recipe from Aunt Martha was what my sweet tooth wanted.

Melt 2 T butter in a 9" baking pan. Mix 1/2 c brown sugar and 1/2 t cinnamon and sprinkle over butter in pan. Arrange 2 c apple slices over the brown sugar and cinnamon.

Sift together in large bowl: 2 c flour, 1 c white sugar, 2 1/2 t baking powder, 1/2 t salt.

Add to mixture in bowl: 1/2 c soft butter, 3/4 c milk, 1 beaten egg. Mix at medium speed for 4 minutes.

After mixing well, spread over apples.

Bake at 375 for 30-40 minutes. Cool 10 minutes, then invert onto serving plate.

Make Rum Sauce by mixing 1/2 c sugar, 2 T cornstarch, and 1 c water well. Cook, stirring constantly until thickened, then cook 2 minutes more. Remove from heat and add 1/8 t salt and 1 T rum extract.

Stir well and cover cake.

I say the Rum Sauce is optional according to your personal preference.
