Chimichangas


But first, an update on the sourdough starter. We left off Wednesday afternooon when I put it at the base of my refrigerator for 24 hours to 'activate.' My evidence that it was doing that would be bubbles. When I looked at it yesterday afternoon I couldn't tell if anything had happened or not. I checked the instructions that came with my 'kit.' They said if it hadn't activated, to give it more time--up to four days. I decided to allow it to spend the night in the well heated bathroom to speed it along. (Remember, it's in a plastic bowl with a plastic cover, and the bathroom was off limits for the night to people and cats, so it's ok.) SUCCESS! When I checked this morning, it had definite bubbling. When I put my nose up to the bowl to smell, it had a wonderful sourdough aroma. Now I have to "feed" it every day by removing 1 cup of the 'dough' and replacing with 1/2 cup flour and 1/2 warm water. Every. Day. Only 9 bread recipes ahead of it.

It's dinner time.

Brown a pound of ground beef in a skillet and drain the fat. Stir in a can of tomatoes and green chilies, and a packet of taco seasoning mix. Simmer. I also put in the green onions because I didn't feel like raw onion tonight. I left out the tomatoes because Andy won't eat them. I also noticed that my seasoning mix was for chicken tacos. No problem.

I substituted little corn tortillas rather than the flour tortillas called for only because I have what seems to be a lifetime supply. Now here's where things went askew. I didn't think I'd be able to add the meat to the tortilla and do the fold. I knew I didn't want to fry them in oil, but I should have at least baked them. Instead I just put the meat on the tortilla and topped with cheese, lettuce, and picante sauce. I think I just made tacos. Sorry Aunt Martha. But my dinner was delicious anyway. I always LOVED having tacos for dinner growing up!
