Light-as-a-Feather Gingerbread


I literally rolled out of bed, fed the cats, and started making bread this morning. This recipe from my Aunt Martha is a real treat.

Pour 1/2 cup boiling water over 1/2 cup shortening. Add 1/2 cup brown sugar, 1/2 cup molasses, and a beaten egg. Beat well. Sift and add: 1 1/2 cup flour, 1/2 t salt, 1/2 t baking powder, 1/2 t soda, 3/4 t ginger, 3/4 t cinnamon. Beat until smooth. Bake in a greased pan at 350 for 35 minutes. (Time to shower and brush my teeth.) Cool in pan.

We were so anxious for gingerbread that we took this out of the pan when it was still hot and crumbling. Delicious, but if I had this to do over, I would let it cool in the pan.

BTW, the BTS Cake from January 9 was fine. After that long wait, I guess I was expecting more.
