Easy Sweet Pickles


I rolled out of bed this morning, but instead of baking bread, I made sweet pickles.

Mix 2 cups sugar, 1 cup water, and 1/2 cup vinegar. I used apple cider vinegar. Add 6 large dills in 1/2 " slices and heat. I used a small jar of sliced dills. When hot, put in glass jar. Let stand until clear. WOW! I turned dill pickles into sweet pickles. And I like them!

Just a little administrative note before we move on: I am skipping the recipes for Rhubarb Jam and Rhubarb Preserves. For pie and bread recipes it made sense to find a substitute for the rhubarb. But these recipes call for a huge amount of rhubarb (25 cups!) and are obviously meant to prepare an abundance of ripe rhubarb for the fall and winter.
