German Apple Cake




First of all, the Three Day Cabbage Slaw was good! We enjoyed it last night.

This recipe is from Aunt Betty.

CAKE:
2 large eggs (or 3 small)
1 cup salad oil
2 cup sugar
2 cup flour
2 t cinnamon
1 t soda
1/2 t salt
1 t vanilla
4 cup thinly sliced peeled apples
1/2 cup chopped nuts

ICING
2 small packages cream cheese
3 t melted butter
1 t vanilla
1 1/2 cup powdered sugar

Beat eggs until foamy; then beat in salad oil. Sift dry ingredients together; mix into egg mixture. Add vanilla. When smooth, add the apples and nuts. The batter will be very thick. Pour into a 9x13 pan which has been greased and floured. Bake at 350 degrees for 45-60 minutes. For the icing, cream the cheese and butter, work in the powered sugar and vanilla.
Spread on cooled cake.
