California Casserole


This was an easy recipe to follow. Cook a package of egg noodles. (I did not salt the water.) Drain. Brown the ground beef in oil*, then add a chopped onion and a pepper. ( I used a red pepper becase I do not like green peppers.) Then stir in a can of creamed corn, a can of tomato juice, a can of tomato soup, a can of olives, a can of pimentos (You already I don't have pimentos, so substituted eight pimento-stuffed green olives.), mustard, and S&P. Then layer the noodles, meat sauce, and put cheese on top. (Since I used a long baking pan, I only had one layer of each.) I put this gloppy mess in the oven at 350 and walked away for an hour. When I came back, it was no longer gloppy and looked and smelled good.

It wasn't as wonderful as Grandma Cross' California Casserole of myth, but it was a decent dinner when paired with a green salad.

P.S. When I had leftovers, I knew why it had such a wonderful reputation - they were outstanding!
