All-In-One Biscuit Mix

Exactly one month ago I said I wasn't going to make recipes for an ingredient, like sweetened condensed milk or biscuit mix, because I didn't see any recipes in the cookbook that used those ingredients. As I was looking ahead today I noticed that Zucchini Casserole, coming soon, calls for Biscuit Mix. Woo Hoo! So I made this recipe of Karen Cross' to have on hand when the time comes.

8 cup sifted flour
1/4 cup baking powder
1 T salt
2 cup shortening

Sift flour, baking powder and salt together. Cut in shortening with pastry plender (fork) until mixture resembles coarse corn meal. Store in tightly covered container in a cool place. May be used with any biscuit or Bisquick recipe. Makes about 11 cups. (I only made a quarter of the recipe.)
