Banana Nut Bread


This recipe is from Paul Cross, from the Benjamin Cross branch of the family. The recipe is very simple and direct.

Cream together a cube of butter, 1 1/2 cup sugar, and 2 eggs. Sift together 3 cup flour, 1/2 t soda, and 1/2 t salt. Add to the creamed mixture with 3 large ripe mashed bananas. My bananas were not particularly large or ripe or mashed. Add 3/4 cup finely chopped nuts. I used the last of my hazelnuts. Chopping them finely was a good meditative task to do since today is my first day to start 'officially' thinking about a new job, specifically what kind of a job at this phase of my life. New career? One of my former careers? Part time job? Contract work? Buy or start a business? Not enough nuts to chop to get it all thought out. Pour into 2 greased and floured loaf pans. I admit-I took a risk and did not flour them. Bake about 45 minutes at 300 until top is browned.

This batter was much thicker than I expected it to be. At first I wondered if I should add milk. But I decided to trust the recipe. It was a satisfying bread.
