
Since this category has the highest number of recipes left to make, I couldn't NOT make this delicious and simple sounding cake this afternoon. The recipe is from my cousin Deo.
2 cups flour
2 cups sugar
2 eggs
2 t soda
1 cup nuts - optional
2 t vanilla
20-oz can pineapple
Mix all ingredients together and pour into greased 9x13 pan. Bake at 350 for 30-40 minutes. Frost while warm with Cream Cheese Frosting:
Mix together:
1 1/2 cup powdered sugar
1 t vanilla
1 cube margarine
8-oz soft cream cheese
Spread over cake while cake is still warm.
Of course, I used walnuts in the cake for the nuts and substituted butter for margarine in the frosting. Spreading the frosting over the cake took a little more effort than I expected, but it eventually melted enough to spread evenly across the top.
