Cranberry Jelly Salad


I planned to make the Zucchini Bread and Sweet Potato Balls for dinner tonight. Because I was feeling so energetic this afternoon, I decided to add this recipe from my grandma. It sounded simple enough, except it had gelatin in it.

2 cups cranberries (I used frozen.)
1 cup boiling water
1 cup sugar
1 1/4 T gelatin soaked in 1/4 cup water ( I realize now I used 1 1/4 t. Oops.)
1/2 cup finely cut apples (I used a small whole apple. Close enough.)
1/2 cup chopped nuts (I used walnuts.)
mayonnaise and lettuce (Uh, no thanks.)

"Cook cranberries in water for 20 minutes." I decided this meant bring the water to a boil, add the cranberries, and boil for 20 minutes.

"Force through strainer." I didn't see how this would work, but decided to humor the recipe. I emptied the boiled cranberries into my colander and used my 'meat mallet' head to force them. I was amazed and surprised when it worked! I put the strained berries into a new bowl.

"Add soaked gelatin, stir until gelatin is dissolved, add sugar." The gelatin/water mixture had thickened slightly, which seemed to be good thing.

"When mixture begins to thicken, fold in chopped apples & nuts." I gave it a few minutes, did not expect it to thicken, and it didn't. Big surprise.

"Mold & chill." Mold? I put this in yet another bowl and put it in the refrigerator.

"Serve on lettuce with dollop of mayonnaise." I couldn't do it.

But this did chill nicely. We had it with ham. It was a lot like a cranberry chutney and very good.
