Zucchini Bread


I've been spoiled with wonderful, simple bread recipes. Here's one from Ida Cross.

Beat 3 eggs until light and fluffy. Add 1 3/4 cup sugar; beat until blended.

Stir in:


  • 1 cup salad oil

  • 3 t vanilla

  • 2 cup grated, unpeeled raw zucchini

  • 2 T grated orange rind

Sift dry ingredients:



  • 3 cups sifted flour

  • 1 t salt

  • 1 t soda

  • 1/4 t baking powder

  • 2 t cinnamon

Stir into egg mixture and 1/2 cup chopped nuts. (The ingredients said nuts or raisins, and I picked raisins.) Turn into greased loaf pans. Bake at 325 for 50-70 minutes or until done. Remove from pan and cool on rack. Chill before slicing.


Well, it's too late for that! The bread is good even though I cooked it too long.
