Make Ahead Potato Casserole


This recipe of my Grandma's was really, really good. And it was so simple I did not need to make it ahead. I placed a layer of cooked, cubed potatoes in the bottom of a casserole. I combined the following ingredients and spread the mixture across the potatoes:


  • can of cream of chicken soup

  • cup of cheddar cheese

  • small minced onion

  • 2 T finely cut green olives stuffed with pimentoes

I put 1/2 cup breadcrumbs on top and baked for 30 minutes at 350.


Andy had ham with it, and I wish I had cubed the ham and put it in the casserole.


I forgot to grease the pan as I was told, but I don't think this will be a problem for my dishwasher.
