
This recipe is from Karen (David) Cross. It had a nice aroma that filled the house this morning.
1/2 cup shortening
1 cup sugar
2 eggs
1 cup mashed banana
1 1/2 T sour milk
1 t lemon juice
2 cup flour
1 1/2 t baking powder
1/2 t soda
1/4 t salt
1 cup nuts
Mix shortening, sugar, beaten eggs, and mashed banana. I used 2 perfectly ripe yellow bananas. I added yogurt (for the sour milk) and the lemon juice here, too. Sift together flour, baking powder, soda, and salt. Mix well. Add nuts - I'm still using my hazelnuts. Pour into greased loaf pan and let sit 20 minutes. Ah, a break! Bake at 350 for 45-60 minutes.

I also made banana bread this morning. I haven't messed up a recipe as badly as I did this one in a long time! I decided to double the recipe since I had lots of overripe bananas to use up. First of all I got the sugar and shortening measurements mixed up. I noticed right away, though, so no harm done. All I had to do was scoop out the shortening and remeasure.
I mashed up the bananas in the blender and added them to the shortening, sugar, eggs mixture. I glanced back at the recipe and noticed I had tripled the bananas instead of merely doubling them! That's way too much liquid, so I had no choice but to go back and TRIPLE the entire recipe.
No sooner had I measured out the dry ingredients, than I noticed that what I thought was baking powder was actually cornstarch!! I scooped out the cornstarch best I could, then had to make a trip to the store because I was out of both baking powder and soda. (It's been awhile since I baked). While I was there, I bought two more loaf pans because I had this huge bowl of batter.
I just took a test loaf out of the oven and, by some miracle, it is good!
