
I made this bread recipe, also from Velma Guffey, this morning after I wrote about the pumpkin bread. I was so disappointed that I had missed the instruction to grease the jars that I paid close attention to this recipe.
Combine these ingredients: 3 c flour, 1 t soda, 1 t salt, 1 T cinnamon, 2 c sugar. Then add 4 beaten eggs, 1 1/4 c oil, 2 c sliced strawberries (I used frozen whole ones), and 1 1/4 c walnuts. Stir until moistened. Spoon into well greased loaf pans. Bake at 350 for 60-70 minutes. So far, so good. I set the timer and left the room.
I came back later and reheated my coffee in the microwave. And I didn't notice how much time was left on the timer before I cleared it! So I have no idea how long the strawberry bread had cooked or had left to go.
Now I know that most days you can estimate what you were doing at a certain time of day pretty accurately. But today is not one of those days. I'm really relaxed and unfocused , and I couldn't even tell you the hour of day. On Law & Order they are always very suspicious when someone can't say what they were doing at a certain time on a certain day, but I swear officer! All I remember is that Andy left sometime after 9:00, I went to Starbucks for coffee and papers, and then at some point I made this bread.
It all worked out OK. I checked the bread frequently, took it out eventually, and let it cool in the pan. It has that wonderful strawberry aroma and tastes just like you would expect it to.
