Flat Chocolate Cake


Boy, those Crosses loved their desserts! I've made good progress through the Cross Family Cookbook in the two months since I started this project. The Appetizers & Beverages, Vegetables, and Miscellaneous sections are complete. I've made solid progress on Breads & Rolls, Soups & Salads, and Casseroles & Meats and can see an end in sight. But it seems like I've barely made a dent in the Cakes, Candies & Cookies and Pastries, Pies & Desserts categories.

So I made a cake this afternoon. This recipe is from Ida Mae Cross.

Mix together:

  • 2 cup flour

  • 2 cup sugar

  • 1 t salt

  • 1 t cinnamon
Melt together and mix into the above mixture:
  • 1 cup hot water

  • 3 t cocoa

  • 1/2 cup shortening

  • 1/2 cup margarine
Pour into greased and floured 12x18 pan. Bake at 325 degrees for 20 minutes. Batter will be very thin. Put on your favorite frosting.
The batter was extremely thin, so I was glad to have the warning. I let it cool while I made the frosting (Quick Caramel Frosting, next).
The cake is very soft, and I'm not sure whether that's the way it was intended or if I should have cooked it longer.
