
This recipe, from Vicki Fiedler, is delicious. I had some on top of a toasted english muffin for lunch. Just make sure to floss after eating!
1 can chopped black olives
1 can chopped mushrooms
1/2 cup chopped green onions
1 can green chilies
2 small tomatoes, chopped
Marinate all of the above in a small bottle of Italian salad dressing; then add a chopped avocado.

GRRR - I can't believe this - I bought an avocado this morning, but I forgot to add it. I'll go do that next.
