
Since my kitchen is already a mess, and I want to mop the floor this morning, I decided to face the shredded zucchini this morning instead of this evening. Boy, am I glad I did! This is wonderful. I've already eaten a quarter of it.
2 1/2 - 3 1/2 cup grated zucchini This was 2 zucchini.
Add 1/4 cup grated onion (approx.). Lightly beat 3 eggs-add to previous ingredients. Mix together and add Bisquick until mixture is of a muffin consistency. I used Karen Cross' All-In-One Biscuit Mix. Add grated cheddar cheese (approximately 1 cup). Stir into mixture and spread in greased (or sprayed) oblong pan. Sprinkle with grated cheese (I forgot to do this.) and bake until knife inserted comes out clean. Bake in 325 degree oven until partially done, then increase temperature to 350. Ok, but how long do you think it will take??? Use your head, Robin!! It's a casserole, but it's kind of like a bread. I set the timer for 60 minutes. I checked it halfway. It was getting a nice golden top, but the knife didn't come out clean. I checked again in 20 minutes because it smelled so good. Perfect!
This is really good hot, right out of the oven. But it was also good when I went back for more later and was able to cut a square and pick it up with my fingers.
