
I've never made Egg Foo Young (and I'm not even sure what it is) so I'm looking forward to making this recipe from Paula Johnson.
5 eggs, beaten
1 1/2 c grated zucchini
1 small onion, grated, or green onions, chopped fine
1 t soy sauce
1/2 t salt
1/2 c wheat germ
1/2 c bean sprouts
1/2 can water chestnuts
Mix and fry like patties at 325 degrees.
This sounds easy. I decided to pre-form the patties so I could cook them when it's time for dinner. The bean sprouts don't look too fresh, and I used the whole can of water chestnuts (which I sliced), but no big concerns. I planned to make these in the oven, like hamburgers. But when I finished mixing, it was pretty runny. Patties? No way! I added another cup or so of zucchini. Maybe muffin tins? I decided to handle this like a pancake batter. I did a test of 2/3 cup in a frying pan. It kind of set, and I was able to make several distinct 'patties' which I put in a baking pan to keep warm until dinner.
Pour sweet & sour sauce over patties if desired. Serve with fried rice. Those recipes are next....
P.S. I don't know if I'll ever make this again, but I have no doubt that if I squeezed all the excess liquid from the zucchini after grating it, it would work find.
