Anytime Muffins


This recipe from Velma R. Guffey says it makes 5-6 dozen muffins so I made a half recipe. I have 2 1/2 dozen very good muffins.

My reduced recipe is:


  • 1 cup rolled oats

  • 1 cup boiling water

  • 2 eggs, beaten

  • 1 cup sugar

  • 1/2 cup oil

  • 1/2 quart buttermilk

  • 1 1/2 cup whole wheat flour

  • 2 1/2 t baking soda

  • 1/2 t salt

  • 2 cup All Bran cereal

Combine oats & boiling water, let cool. Mix together eggs, sugar, oil, & buttermilk. Stir in sifted ingredients with All Bran. Stir just until moistened. Bake in well greased muffin tins 15 minutes at 375.
