Fast & Frosty Potato Salad


This recipe is from Velma Guffey. This salad makes a nice lunch on its own.



  • 1 lb package of frozen french fries

  • 2 hard cooked eggs, sliced

  • 1 1/2 cup thinly sliced celery

  • 1/4 cup minced onion

  • 1 cup shrimp

  • 1 cup mayonnaise

  • 1/2 cup sour cream

  • 1 t Dijon mustard

  • 2-3 dashes tabasco sauce

  • S&P
Place the frozen fries into boiling water. Simmer five minutes; drain & cool. Blend mayonnaise with sour cream, mustard, & seasonings. Pour over combined potatoes, shrimp, celery, onion, and eggs.
