
This is one of my favorite family recipes from my grandma. It's better known in our family as the Seven Layer Salad. It was a frequent dish at my grandma's house and family dinners. In a 9x13 pan, make the following layers:
- 1 head lettuce, broken into pieces. I used a bag of 'Hearts of Romaine.'
- 1 cup diced celery
- 4 sliced hard boiled eggs
- 10-ounce bag of frozen peas
- 1/2 cup diced green pepper. I used mini red sweet peppers.
- medium onion, sliced in rings. I used a red onion, and I diced it.
- 8 slices fried bacon, crumbled. I broiled my bacon in the oven this morning. It's the first time I've made bacon that way, and I liked it!
Next, combine 2 cups mayonnaise with 2 T sugar and spread it over the top. For some people, this would be the deal breaker. However, I love real mayonnaise, am partial to Best Foods, and I know that this makes the "salad" yummy!
Of course, the finishing touch is to cover it all with grated cheese, then cover and refrigerate for 8-12 hours or overnight.
