Apple Hill Cake




This very cool recipe is from Velma Ruth Guffey. I believe this would be my Aunt Velma. I hope someone is paying attention to my attempts to figure out the family tree and will let me know if I get anything wrong!

Combine 2 cups sugar, 1/2 c oil, 2 beaten eggs, and 4 cups diced apples. I used Honey Crisp apples this morning. Sift together the dry ingredients of 2 cups flour, 1 t salt, 2 t cinnamon, 1 t nutmeg, and 2 t soda. Aunt Martha had a note that she has this same recipe called Raw Apple Cake that calls for 2 t vanilla, so I added the vanilla.

Pour into a 9x13 pan. Bake at 350 for an hour. I took it out at 58 minutes because it started to smell burned. I was afraid I had let it go too long. But it turned out fine! It was crisp on the edges and moist on the inside, like the perfect brownie.

We had this for breakfast. I know - it's a cake - Horrors! But come on. Look at the ingredients for some of those 'breakfast' foods - donuts, muffins, pancakes. It's a technicality. And it was all for the greater good of moving this project along!
